Cookies and Cream Rice Krispies Treats

Cookies and Cream Rice Krispies Treats are loaded with Oreo cookies and the white chocolate chips taste like drops of extra creme filling.
Pro Tip
Prior to pressing the marshmallow mixture into the baking pan (step #5), grease hands lightly with nonstick cooking spray.

A cup of reserved marshmallows is stirred in at the end to add a pillowy texture to each bite.

I like to use a serrated knife to cut the Rice Krispies treats into 9 large squares but they can also be cut into 16 smaller ones.

Rice Krispies treats are loaded with Oreo cookies then white chocolate chips that taste like drops of extra creme filling.

Ingredients

  • 1/4 cup (4 tablespoons) butter

  • 1 (10-oz) bag miniature marshmallows

  • 5 cups Rice Krispies cereal

  • 12 Oreos, roughly chopped

  • 1/2 cup white chocolate baking chips

Directions

  • Line a 9×9 inch baking pan with aluminum foil and grease with nonstick spray. Measure 1 cup of marshmallows and set aside.
  • In a large saucepan, melt butter on medium low heat. Add the remaining bag of marshmallows and stir frequently until completely melted.
  • Remove from heat and stir in Rice Krispies cereal, 1 cup of reserved marshmallows, and chopped Oreos.
  • Once the cereal and cookies are mostly incorporated and the mixture has slightly cooled, add the white chocolate baking chips and stir briefly.
  • Immediately pour the mixture into the prepared baking pan and gently press into an even layer.
  • Allow to cool at room temperature for about 30 minutes.
  • Lift the foil from the baking pan onto a cutting board and cut into squares.

Notes

  • Store in an airtight container at room temperature for up to 3 days.
