Birthday Funfetti Pancakes are loaded with rainbow sprinkles then topped with melted icing and even more sprinkles. These taste like funfetti cupcakes and are great for a birthday breakfast or for adding a little fun to breakfast any day of the week.
Pro Tip
The batter should not be overmixed once the sprinkles are added (step #2) since the sprinkles will start to bleed their colors in the wet batter. For more than 6 pancakes, it is best to make another batch rather than doubling the recipe.

Fluffy pancakes loaded with rainbow sprinkles then topped with melted vanilla icing and even more sprinkles.

Ingredients

  • 1/2 cup boxed cake mix (white or yellow cake mix is best)

  • 1/2 cup dry pancake mix

  • 1/2 teaspoon baking powder

  • 1 egg

  • 1/2 cup milk

  • 1/2 tablespoon oil

  • 1/2 teaspoon clear or pure vanilla extract

  • 1 tablespoon rainbow sprinkles, plus more for topping

  • 1/4 cup canned vanilla icing

Directions

  • In a medium bowl, whisk together dry cake mix, pancake mix, and baking powder.
  • Add egg, milk, oil, and vanilla extract then whisk until smooth. Fold in sprinkles.
  • Heat a lightly greased griddle or frying pan over medium heat.
  • Scoop 1/4 cup batter and gently pour onto the griddle. Cook until the pancakes appear dry around the edges and bubbles form in the middle, about 2 minutes. Flip and cook another 10-15 seconds until the bottom is golden brown.
  • Place the icing in a small bowl or glass measuring cup and microwave until smooth and pourable, about 10 seconds. Top pancakes with melted icing and additional sprinkles then serve immediately.

Notes

  • Pancakes are best served warm but leftovers may be refrigerated and reheated in the microwave.
