Cinnamon Crunch Bagel Bites are mini bagel rolls stuffed with maple flavored cream cheese and topped with crunchy cinnamon sugar.
Pro Tip
This recipe uses a small amount of egg wash to stick the cinnamon sugar to the bagel bites. The leftover egg wash can be scrambled with extra eggs instead of getting thrown out.
Plan Ahead
The bagel dough needs to rise for about 45 minutes prior to baking.

First make the maple cream cheese filling by stirring together cream cheese, brown sugar, maple syrup, and vanilla or maple extract. Scoop into 8 equal portions onto a baking pan lined with wax paper then place in the freezer.

In another bowl, add bread flour, yeast, and salt. Slowly stir in water until a ball forms, then knead for about 5 minutes until the dough is easy to handle but still slightly sticky. Place the dough into a lightly greased bowl then cover with plastic wrap and allow to rise for about 45 minutes.

Once the dough has doubled in size, divide into 8 sections and flatten each into a 3-inch circle. Place a scoop of frozen cream cheese into the center of each circle then press the edges together to seal.

For the cinnamon crunch topping, mix together brown sugar, sugar, cinnamon and butter in a small bowl. In another bowl, beat an egg with ½ teaspoon water. Brush the tops of the bagel bites with egg wash then sprinkle with cinnamon crunch topping, pressing down slightly to stick.

Bake the cinnamon crunch bagel bites for 25-28 minutes, until lightly browned, then serve warm.

Ingredients

  • For the Maple Cream Cheese:
  • 4 oz cream cheese, softened

  • 1 tablespoon brown sugar

  • 1 tablespoon maple syrup

  • ¼ teaspoon vanilla or maple extract

  • For the Bagel Dough:
  • 1 ¾ cups bread flour

  • ½ teaspoon rapid rise yeast

  • 1 teaspoon salt

  • ¾ cup warm water

  • For the Cinnamon Crunch Topping:
  • 1 ½ tablespoons brown sugar  

  • 1 ½ tablespoons sugar

  • 1 teaspoon cinnamon

  • 1 teaspoon butter

  • 1 beaten egg

  • ½ teaspoon water

Directions

  • For the Maple Cream Cheese:
  • In a small bowl, mix together the cream cheese, brown sugar, maple syrup, and vanilla/maple extract.
  • Line a plate or small baking pan with wax paper and spoon 8 equal scoops of the maple cream cheese onto the wax paper. Freeze until the dough is ready to use.
  • For the Bagel Bites:
  • In a large bowl, add bread flour, yeast, and salt. Stir together with a fork then slowly add the water until a ball forms.
  • Knead the dough for 5 minutes, adding up to an extra 1-2 tablespoons of flour, until smooth.
  • Place the dough in a lightly greased bowl and cover with plastic wrap. Rise 45 minutes.
  • Preheat the oven to 350 F and line a baking pan with parchment paper.
  • Divide the dough into 8 equal portions. Working with one portion at a time, flatten into a 3-inch circle and place a frozen scoop of the maple cream cheese into the center. Pinch together the ends to completely seal in the cream cheese then transfer to the baking pan.
  • In a small bowl, add 1 ½ tablespoons brown sugar, sugar, and cinnamon. Work in butter until well combined and the sugar has the texture of wet sand.
  • In another small bowl, beat the egg with water then brush over the tops of the bagel bites. Sprinkle with all of the cinnamon sugar mixture, pressing gently to stick.
  • Bake 25-28 minutes, until the edges around the bottom are golden brown.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
