The cookie dough is made by mixing together boxed brownie mix and softened cream cheese until most of the cream cheese is worked in. Melted butter and an egg are added then the dough is scooped out onto a baking pan.

Creamy peanut butter, powdered sugar, and vanilla are combined to form the topping. It is then rolled into balls and pressed into the warm cookies.

Once the peanut butter-topped cookies have cooled, melted chocolate is spooned or drizzled over each cookie.

Fudgy brownie cookies topped with sweetened creamy peanut butter then drizzled with melted chocolate.

Ingredients

  • 1 (18.3-oz) box fudge brownie mix

  • 4 oz cream cheese, softened

  • 1/4 cup (4 tablespoons) butter, melted

  • 1 egg

  • 3/4 cup creamy peanut butter

  • 3/4 cup powdered sugar

  • 1/2 teaspoon vanilla

  • 4 oz chocolate or dark melting wafers, melted

Directions

  • Preheat oven to 350 F. Line two baking pans with parchment paper.
  • In a large bowl, mix together brownie mix and cream cheese until there are no large lumps of cream cheese remaining.
  • Add the melted butter and egg then stir until smooth.
  • Scoop 1 1/2 – 2 tablespoons of dough onto the prepared baking pans using a spoon or small cookie scoop.
  • Bake 14-16 minutes until the cookies have puffed up and the tops appear dry.
  • While the cookies are baking, mix together peanut butter, powdered sugar, and vanilla in a medium bowl. Divide into portions equal to the number of brownie cookies and roll into balls.
  • Once the cookies have finished baking, remove from the oven and immediately place a peanut butter ball into the center of each cookie.
  • Allow to cool completely then spoon or drizzle melted chocolate over the cookies.

Notes

  • Store in an airtight container at room temperature for up to 3 days.
