Strawberry Shortcake Rice Krispies
These Rice Krispies treats are made with freeze dried strawberries for natural fruit flavoring without the added moisture of fresh strawberries.
I like to use a serrated knife to cut the Rice Krispies treats into 12 large squares but they can also be cut into 24 smaller ones.
The Rice Krispies can be finished with an optional white chocolate drizzle that adds a nice contrast to these pink treats.

Ingredients
1/4 cup (4 tablespoons) butter
1 (10-oz) bag miniature marshmallows
5 cups Rice Krispies cereal
1 oz freeze dried strawberries, about 2 cups
12 Golden Oreos, roughly chopped
1/2 cup plus 3 tablespoons white chocolate baking chips, divided
Directions
- Line a 9×13 inch baking pan with aluminum foil and grease with nonstick spray. Measure 1 cup of marshmallows and set aside.
- Place the strawberries in a food processors or blender and pulse 3-4 times, until coarsely ground.
- In a large saucepan, melt butter on medium low heat. Add the remaining bag of marshmallows and stir frequently until completely melted.
- Remove from heat and stir in Rice Krispies cereal, crushed strawberries, 1 cup of reserved marshmallows, and chopped Oreos.
- Once the cereal, strawberries, and cookies are mostly incorporated and the mixture has slightly cooled, add the white chocolate baking chips and stir briefly.
- Immediately pour the mixture into the prepared baking pan and gently press into an even layer.
- Allow to cool at room temperature for about 10 minutes.
- Add the remaining 3 tablespoons of white chocolate baking chips to a heatproof bowl and microwave at 20 second intervals, stirring between each interval until smooth. Drizzle the melted white chocolate over the Rice Krispies treats.
- Once the drizzled chocolate has hardened, lift the foil from the baking pan onto a cutting board and cut into squares.
Notes
- Store in an airtight container at room temperature for up to 3 days.
